Kahoku Palafox joined COPE Health Solutions in 2020 as a Regional Manager of the COPE Health Scholars program. In this role, Ms. Palafox is a crucial link between Program Managers, who run the day to day operations of our Health Scholar sites, internal executive leadership and hospital clients. In her role, Ms. Palafox supports clients in Orange County, California and on Oahu, Hawaii.

Prior to her role at COPE Health Solutions Ms. Palafox worked with La Tour Products, a start-up food manufacturing company, where she championed the development and implementation of their administrative, operational, and quality assurance teams and initiatives. Preceding this, she was part of the Global Services Department at NewYork-Presbyterian Hospital (NYP) where she assisted in the facilitation of care for international patients. While at NYP Ms. Palafox helped develop and recruit for the Global Education & Training program, providing international practitioners with US Training opportunities to enhance their medical aptitude.

Ms. Palafox attended Arizona State University where she received her Bachelor of Arts in Sustainability, with a focus on Society and Sustainability, and her Master of Urban and Environmental Planning, with a focus on Public Health. Ms. Palafox is passionate about addressing public health gaps through the nexus’ of food systems, functional/ integrative medicine, environmental impacts, and the urban landscape. Through her life and work experience, Ms. Palafox seeks to share her knowledge and passion with future healthcare providers, giving back, and advocating for underserved populations.
